ok i have come up with this (with help from my butchers ;D )

chicken and rabit will be his main stable diet
however when the butcher gets it in he will also get
beef shanks
little bits of beef

but he also mentioned:
ox and goat
also the only offal he does is lamb and pork

what do people think of ox and goat?
also would pork offal be ok to feed or should i spend the extra to get beef offal or would he be ok without offal?

Rabbit - be careful a diet which consists mainly of rabbit would be deficient in fat and could lead to rabbit starvation syndrome, the best diets consist of varied sources of protein.

pork - fine

ox  is just another name for beef!

goat is fine

Any meat is fine for a dog unless it has a problem with it. Offal provides essential sources of nutrients and is particularly rich in Vitamin A, source is not a problem.

ok what about chicken, rabit and beef as starting diet with pork offal.

how should i intreduce chicken bones?
he crunches ribs well and has marrow bones aswell.

can you feed beef, rabbit, chick in a meal together with each other or should they be fed by themselves?

how often should offal be fed?

I would always start a dog on one protein source, see how he deals with it and then introduce a new one eg chicken wings etc to start as even 7 week old pups can manage these.
Personally I avoid mixing meats as I do not see any advantage in this although I might mix in offal from one species into mince of another to a dog that will not eat offal.

offal is usually high in Vitamin A so should not be fed in excess and is usually laxative, so once or twice a week
